Nakiri Knife
Nakiri knives are the double edged Western style equivalent of a single edged Japanese usuba knife. Thanks to their straight blade, nakiri are ideal for julienne, brunoise allumette an other precision knife cuts for vegetables. Also a great tool for cutting into very hard skinned produce like pumpkins and squash.
CBC knives are made from 67 layer hammered damascus steel.
- 10cr high carbon super steel core
- 15 degree bevel (double sided)
- Full tang for balance and strength
- 60-62 HRC hardness
Each knife has an ebony wood handle with brass inlay for left or right grip. The handles are made with natural wood and each will have a unique color and grain pattern.
Damascus Type is a labor-intensive forging process in which multiple layers of two or more types of steel are repeatedly folded. This results in a more brittle core, and can be honed to a significantly sharper and harder edge.
